32x32 covers browser tabs, 180x180 covers the iOS home screen via apple-touch-icon, and 192x192 plus 512x512 cover Android and the web app manifest. Anything beyond that is legacy.
Only for very old browsers. Modern ones prefer PNG and will use whatever you declare in link tags. Keeping a 32x32 ICO at the site root is harmless insurance and costs almost nothing.
Detailed logos do not survive being scaled to 32 pixels. Favicons that read well are usually a single letter or one bold shape with heavy padding. If your full logo is unreadable at that size, design a simplified mark just for the icon.
